Since what happened to my dear country Japan in march, it was on my birthday as well when Japan got hit with earthquake and then tunami. I was so heart broken that I wasn't able to watch on news(internet-I don't owe telly) for ages. I felt useless and helpless just watching from U.K. I wanted to do something, only I could do from here was to pray. That's what I've been doing since. I feel connected, the most nicest thing is that my mum rings me more often(than before) and feel good I'm actually here for her if she needs to talk. During the earthquake, my mum was in local hospital for her broken hip(she fell downstairs one night). Before all that happened I sent my mum a letter and CD(lots of photos!) asking I wanted some seaweed salad in packs. When I was in London, it was easy for me to get this particular seaweed salad in packs, used to go to SOHO for that! Here in Bury St Edmunds, no-one sells seaweed salad. I felt a bit stuck, I did search on Japanese shops on net, but I didn't find any. so, I asked my mum. No reply..... then Japan got hit by quake.... Now, radiation to the sea and land... felt Japan was f**ked. I carried on searching.... then, I found this guy who sells Irish seaweed!!! I was well chuffed. It was local(sort of), and very reasonable. so I ordered a pack. It came in 5 small packs . It was called Irish Dulse. It was tasty. very sweet. It came semi-dried form, so I just needed to soak in cold water for a couple of minutes, then chop to favo size. I've been eating this seaweed almost everyday in my salad or pasta. My seaweed salad looks like this;
I cooked "Kabocha(pumpkin) rice" too. Marcus loved it! sometimes English people don't like strange food, good old Marcus, He's a good boi!!! The guy who sells Irish Dulse also sells "Mixed seaweed". Recently I bought a bag(catering pack), also very reasonable, this is fantastic!It has 4 different kinds of seaweed; Dulse, Laver, Sugar Kelp, AND Spirulina!!!! hooray! I do take Spirulina in powder form in smoothies or water. But I always was interested in having it in my salad. Not a lot in the pack but nice combination of seaweed. Seaweed is good source of minerals and calcium. In Japan we eat lots and lots of these, but I'm worried that due to the radiation sea vegetables are polluted.... shame, we do have fab sea vegetables and they are in our dairy diet. Anyway, i mixed seaweed with some sprouts on bed of rocket, spinach and baby bok choi with spicy soy(tamari) dressing. It goes well with warm sunny summer day/eve. Following evening i made "Quinoa and Soya bean Pattie with avocado and Spiced Kabocha Hummus. That was also beautiful!
This green leaves were from my little garden so as herbs. they were very fresh when we ate them, they were still alive!!!!! I baked the patties in oven very slowly...i don't have de-hydrater....yet. They were crunchy on outside, still very moist and warm inside. This salad has plenty protein, just what i needed. And drizzle(lots!) good extra virgin olive oil on to the salad, here it goes, apparently avocado and extra virgin olive oil improve calcium and magnesium absortion and supports to develop strong bones and teeth! I didn't know that. That's one of many reasons why we need to take good fat! I learn something every day!!!
