Hungry Norie's Raw Nik Naks 4---Coconut & Kabocha Squash Vegan Tart (Raw, Sugar-Free & wheat-Free)

I was hungry for sweet things. Since  my holiday in Japan, I'd been having cravings for cakes!  It was all started from just one small bread roll I had in the air plain on my way back here.
I was hungry and food wasn't that great (we ordered vegan food...), I thought, just one...and lead another one.... soon, I was eating a cake at work...

It's been hard,  also I needed to attend work Christmas dinners, (I cancelled a few) veggie option wasn't that great, and always they had to have wheat pastries and cheese, I wasn't feeling too good eating after that.

Anyway, I'm now back on the track again. Salad, grains, nuts, seeds, lots of fresh vegetables and fruits. Feel much better! 

I had a Kabocha squash in my fridge, I suddenly fancied Kabocha dessert. So, I made a tart.


Coconut & Kabocha squash tart







"Pastry": 125g Pitted dates---chopped small in a food processor
                50g Desiccated coconut
                70g Brazil nuts----ground
                Drop of edible orange oil or orange flower water

All in food processor, process into bread crumbs consistency, then, empty out, knead into a ball.
Roll out (could roll out between 2 baking parchment) onto 19.5cm tart tin.

"Filling": 300g Kabocha squash---skinned, chopped into small dices
                50g Cashew nuts---ground
                1/3 cup coconut oil---melted
                Drop of alcohol-free vanilla extract/oil/pod
                1&1/2 teasp cinnamon
                1/2 teasp mixed spice

Everything in a blender to puree / very soft paste, pour into the prepared tin,  sprinkle with more desiccated coconut on top, and shove in fridge till set.

It was delicious, but I should've put a little more spices, I like it spicy! It's guilt-free, the best thing about food like these is that it doesn't give me funny cravings like sugar does! Actually, making it helped me to deal with it. Looks same as regular desserts but how to make is far different. So, I know now, they ARE completely different, this makes me easy to reprogram my head.

I'm not 100% raw vegan person, but raw food is great, next week, my friend's coming to mine for a quick vegan/veggie lunch, so I'm planning to make yet another tart! Can't wait, yum yum.
